SOUTH AFRICA: FARMER BROWN BREAKFAST

A fantastic fry-up is a South African Sunday morning institution. Bacon, sausages, eggs, tomatoes, mushrooms, toast… The Full English is fully South African. Swap the sausages out for boerie and you have a winner! Here’s how to whip up a brunch or breakie that always tastes of home, no matter where you are on the globe.

Serves 4

Ingredients:

  • A little butter and splash of oil
  • 4 eggs
  • 200g bacon
  • 1 punnet pork sausages
  • 15 ml butter
  • ± 15 ml soy sauce
  • 1 punnet button mushrooms
  • 3 medium tomatoes
  • 15 ml butter
  • 2 onions, sliced

Method:

Sear the bacon in a pan on the gas hob of the Defy Cooker until caramelised. Place a little water in a pan and place on the gas hob of the Defy Cooker.  Place the pork sausages in the pan and cover with a lid. Turn the heat down and cook until cooked through. The water will evaporate and the sausages will turn brown and caramelised. Add the 15 ml butter to another pan and place on the gas hob of the Defy Cooker. Add the mushrooms and cook while stirring continuously. Once cooked, add the soy sauce. Slice the tomatoes in half and pan sear in a pan on the gas hob of the Defy Cooker. Add the last amount of butter to a pan and heat on the gas hob of the Defy Cooker. Once hot, add the onions to the pan. Continue to stir until the onions turn brown and caramelised.

Lastly, heat a pan with a little butter and a splash of oil until hot. Crack the eggs into the pan. Add a splash of water to the pan and cover with a lid. Lower the heat and continue to cook until the whites are cooked through and the yolk is still soft (or to your desired doneness).
