For the syrup:

  • 120 ml water
  • 100 g granulated sugar
  • 2 cinnamon sticks
  • 4-5 cloves
  • 1 star anise

 

Trifle Ingredients:
  • 200 g ladyfingers
  • 150 g fresh mango, diced
  • 200 g granadilla (passion fruit) pulp
  • 150 g fresh pineapple, diced
  • 150 g mixed berries
  •  250 ml coconut cream
  • 250 ml vanilla custard

 

For garnish:
  • Chopped nuts (macadamia, cashews, almonds)
  • Shredded coconut
  • Fresh mint leaves

Preparation

 

  1. Make spiced syrup by simmering water, sugar, cinnamon, cloves, and star anise. Strain and cool.
  2. Layer ladyfingers in a dish, moisten with syrup.
  3. Add layers of mango, granadilla pulp, pineapple, and berries.
  4. Pour coconut cream, followed by another layer of ladyfingers and syrup.
  5. Add vanilla custard, and garnish with nuts, coconut, and mint.
  6. Refrigerate for 2 hours to blend flavors.
