Ingredients

 

  • 400 g mutton, cubed
  • 200 g corn on the cob, divided
  • 200 g basmati rice
  • 100 g onion, chopped
  • 80 g extra virgin olive oil
  • 20 g red pepper powder
  • 10 g salt
  • 10 g black pepper
  • 1 L water
  • Fresh coriander leaves

Preparation

 

  • Heat the extra virgin olive oil in a pot. Add the chopped onions and fry.
  • Add the diced mutton. Cook for about 5-6 minutes until the meat turns brown.
  • Add crushed red pepper, salt and black pepper and stir.
  • Add the washed basmati rice and stir-fry for a few minutes.
  • Add the split corn on the cob and stir.
  • Divide the mixture into casserole dishes and add water
  • Bake in an oven preheated to 200°C until the water is reduced
  • Sprinkle with fresh coriander leaves before serving.
